Did you know Ethiopia is the birthplace of coffee? This extra special heirloom coffee is a rare lot of coffee from the Koke washing station. What is rare about this lot is it's natural/honey hybrid process. This coffee is delivered to the washing station where the coffee begins its dry fermentation for 2 days with the skin on the cherry. The cherries are then collected and depulped, slightly removing the skins and leaving a majority of fruit on the bean to dry for up to 20 days. During drying, the coffee is moved around on raised mesh beds to allow for better air flow and even drying. This process allows for accentuated fruit flavours that are crisp and defined.
